Abstract

Liver is a valuable food which is frequently recommended to sufferers from anaemia. It is an excellent source of iron and contains appreciable quantities of Vitamin A and Bl, but most people experience difficulty in "ringing the changes", and providing variety in the menu for those whose medical advisers have prescribed a liver diet. These recipes may serve to give some needed variety to liver dishes and they include some European national and traditional methods of using liver in cookery.
